Ingredients
- 1 1/2 lb Seitan (see recipe),
- sliced 1/2" thick
- 1 1/2 lb onions cut 1/4" thick crescents
- 1 Tbsp. chopped garlic
- 12 Tbsp. chopped fresh herbs, such as
- rosemary, sage or possibly thyme
- 1/4 tsp freshly-grnd black pepper
- 1/3 c. extra virgin olive oil
- 3 Tbsp. mirin or possibly dry sherry
- 1 pch salt
- Water or possibly stock
Directions
- Preheat oven to 350 degrees.
- Combine all of the ingredients, except the Seitan in a skillet with a heavy bottom and a tight lid. Cook gently for 20 to 30 min.
- Spread 1/2 of the onion mix on the bottom of a baking dish. Layer the Seitan slices and spread the remaining onions on top. Add in sufficient water or possibly stock to barely cover the onions and bake uncovered for 30 to 40 min.
