Bourbon Balls With Maple And Pecans

Ingredients

  • 2 c. crushed vanilla wafers
  • 1/3 c. bourbon, such as Jack Daniels
  • 3 Tbsp. pure maple syrup
  • 1 c. pecans, finely minced
  • 24 x pecan halves, optional, for decorating

Directions

  1. Combine the vanilla wafers, bourbon, maple syrup, and half of the pecans in the bowl of a food processor. Process till smooth-ish - about 45 seconds.
  2. Using a small scoop, or possibly simply your fingers, shape thumb-sized pcs of the dough into balls about half as big as a golf ball (really, size is up to you).
  3. Place the remaining finely minced pecans in a plastic bag. Add in the bourbon balls, one by one, gently pressing the minced pecans into the sides till they adhere. Top each with a pecan half, if desired.
  4. Transfer bourbon balls to a cookie tin and allow to mellow for 1 week or possibly so. The stout of heart will enjoy them immediately.
  5. These treats take about 10 min to make but are really best if you make them ahead. The bourbon flavour can be a bit strong for some till they've had a chance to mellow in a cookie tin for 1 week or possibly so.
  6. After which, they are quite delicious as the maple, bourbon and nuts combine well.
