Ingredients
- 2 lbs. pea beans
- 1 1/4 lbs. salt pork, washed, score
- 6 tbsp granulated sugar
- 1 teaspoon dry mustard
- 6 tbsp. molasses (crude-black strap)
- 1 teaspoon baking soda
- 1 quart. boiling water
Directions
- Wash beans and soak overnight, then put on fire with the same water. When it comes to a boil, add in 1 tsp. baking soda and stir well. Wash with cool water. Put 1 c. boiling water in bean pot before adding beans. Put all beans in pot, then washed pork with the rim showing, all mustard and all others to boiling water and pour over beans. Place in a 350 degree oven. When it starts to simmer, turn down to 225 degrees. Keep adding water every hour and cook about 6 to 7 hrs.
