Ingredients

  • 1 1/2 pound pea beans or possibly yellow eye or possibly kidney beans
  • 1/2 pound salt pork
  • 1 teaspoon dry mustard
  • 1 teaspoon soda1 onion
  • 2 tbsp. sugar
  • 1 1/2 tbsp. salt
  • 2 tbsp. molasses

Directions

  1. Soak beans overnight. Rinse and heat to boiling, drain. Cut salt pork in half. Score. Place one piece in bottom of pot. Fill pot half full of beans. Place pealed onion on top. Put rest of beans in pot.
  2. Add in dry ingredients. Mix rest of beans - put salt pork on top. Add in molasses. Cook in bean pot in 350 degree oven or possibly crock pot 3 to 4 hrs. Add in water to top to keep moist.
