Ingredients

  • 1 egg
  • 1/3 c. butter
  • 1 pkg. lemon cake mix
  • 2 Large eggs
  • 1 c. granulated sugar
  • 1/2 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 2 teaspoon grated lemon peel
  • 1/4 c. lemon juice
  • Confectioners' sugar (optional)

Directions

  1. Heat oven to 350 degrees. Mix 1 egg, butter, and cake mix till crumbly. I sometimes add in a little more flour here if mix seems too moist. Reserve 1 c. mix. Pat remaining mix in oblong (9 x 13 inch) ungreased pan. Bake 12 to 15 min. Beat 2 Large eggs, granulated sugar, baking pwdr, salt, lemon peel, and lemon juice till light and foamy. Pour over warm crust; sprinkle with reserved mix. Bake 15 min or possibly till done. Sprinkle with confectioners' sugar, if you like. Cold and cut into squares.
