Boneless Chicken Breasts With Grapes

Ingredients

  • 3 whl chicken breasts (3 lb), halved, boned, and skinned Salt and freshly grated nutmeg, as needed
  • 2 Tbsp. butter or possibly margarine
  • 1 Tbsp. orange marmalade
  • 1/4 tsp dry tarragon
  • 1 x green onion, thinly sliced (use part of top)
  • 1/3 c. dry white wine
  • 1 c. seedless grapes
  • 1/4 c. whipping cream

Directions

  1. Sprinkle chicken breasts with salt and nutmeg. In a large frying pan, heat butter over over medium-high heat and brown chicken lightly. Add in marmalade, tarragon, green onion, and wine. Cover, reduce heat, and simmer 10 min; add in grapes, cover again, and continue cooking till chicken is cooked through (about 10 min longer; test in the thickest part with a small kitchen knife). Using a slotted spoon, remove chicken and grapes to o heated serving dish; keep hot.
  2. Add in cream to liquid in pan. Bring to a boil, stirring; cook till sauce is reduced and slightly thickened. Salt to taste. Pour sauce over chicken.
  3. Yield: 4to 6 Servings
