Ingredients

  • 4 tbsp. butter
  • 2 - 3 teaspoon curry pwdr
  • 1/2 c. minced onion
  • 3 tbsp. all purpose flour
  • 1/4 teaspoon salt
  • Dash pepper
  • 1 1/2 c. chicken broth
  • 2 c. diced cooked turkey (or possibly chicken)
  • 1 teaspoon shredded lemon peel
  • 2/3 c. long grain rice
  • 1/4 c. minced cashew nuts
  • 2 tbsp. minced, canned pimiento

Directions

  1. In medium skillet, heat butter. Add in curry and heat 2 to 3 min. Stir in onion and cook till tender but not brown. Blend in flour, salt and pepper, stirring well. Add in chicken broth all at once. Cook and stir till boiling; cook 2 min longer. Add in cooked turkey and shredded lemon peel; heat mix to boiling. Cook rice according to package directions. Stir in cashew nuts and pimiento. Serve turkey mix over rice. Makes 4 to 6 servings.
