Boiling Chicken A La Granadina Recipe

Ingredients

  • 2 kg of boiling chicken.
  • 1 lrg onion.
  • 1 x bay leaf.
  • 1/4 lt of white table wine.
  • 200 gm of sweet potato (jams).
  • 1 sprg of parsley.
  • 1 kg spinach. Salt and grnd black pepper.
  • 1/2 x glass of extra virgin extra virgin olive oil. Some grains of black pepper.
  • 4 x bananas

Directions

  1. Chop the boiling chicken in small pcs, wash it well and sprinkle with salt and pepper. Place the meat, the oil, the bay leaf, the minced onion and the grains of pepper in a large pan. Heat on a medium flame. When the meat is browned, add in the wine and heat till it is reduced. Cover with warm water and leave to cook. Separately, boil the spinach and drain it well.
  2. Place in a frying pan with a little oil, the sweet potato cut in cubes and the sliced bananas. Fry gently till the banana is browned. When the boiling hen is cooked and tender add in the mix from the frying pan and the parsley. Boil for 10 min, stirring to avoid it sticking to the bottom of the pan. Add in salt to taste. Serve warm.
