Boiled Pork Knuckles Soup with Squash (Nilagang Pata may Kalabasa) Recipe

This is the usual pork pata soup but with squash this time. Try it.

Directions

  1. Wash the pata well and scrape the skin with a knife (best to get a cleaned pieces at the butcher's)
  2. Place in a pressure cooker and cover with water.
  3. Add the ginger, onion, peppercorns and salt.
  4. Let it boil for 45 minutes or until very tender.
  5. Remove all the scum from the pressure cooker and let it boil again without the cover.
  6. Add the potatoes, green beans and squash; simmer for about 10 minutes or until fork tender.
  7. Add the leafy vegetables, simmer for a few minutes and remove from heat.
  8. Transfer to a serving bowl and enjoy with steamed rice.
