Bohemian Raised Dumplings Recipe

Ingredients

  • 4 c. Flour
  • 1 tsp Sugar
  • 1/2 ounce Red Star fast yeast cake
  • 1/2 c. (about) lowfat milk
  • 1 Tbsp. Salt
  • 1 whl egg
  • 1 x Egg yolk

Directions

  1. Sift flour into a bowl and make a well in the center. Add in about 1 tsp. sugar, 1/2 oz crumbled yeast and 1/2 c. hot lowfat milk. Let set till yeast bubbles up. Then add in 1 Tbsp. salt, 1 whole egg and add1 egg yolk. Mix till dough is smooth. Sometimes, it is necessary to add in more lowfat milk. Let dough raise and then put on a well greased bread board, and divide into dumplings, about the size of large oblong oranges. Shape well and place in a pot of boiling water.
  2. Some people like cubed bread in these dumplings. If you add in cubed bread, add in it before you let the dough rise. You can also lightly fry bread before you let the dough rise. Then place it in the dough. I would not suggest doing either of these options till you are proficient in making dumplings.
  3. Use a large pot and add in a lot of water. When dumplings have been boiling 10 min, turn over and boil and additional 10 min on the other side.
  4. Dumplings should take around 20 min to cook. When dumplings are done, remove from water. Let cold on a rack before cutting into slices with a string.
