Ingredients

  • 3 Large eggs
  • 2 1/4 c. sugar
  • 1 c. oil
  • 3 teaspoon vanilla
  • 3 c. flour
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/2 teaspoon baking pwdr
  • 3 teaspoon cinnamon
  • 2 c. minced zucchini
  • 1 c. minced nuts
  • Blueberries

Directions

  1. Beat Large eggs and sugar together. Add in oil slowly mixing after each addition. Stir in vanilla. Fold in dry ingredients. Add in zucchini, nuts and blueberries. Put in greased and floured loaf pans. Makes 2 loaves. Bake 45 min at 350 degrees.
