Ingredients
- 1 c. oatmeal
- 1 c. buttermilk or possibly sour lowfat milk
- 1 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1/2 teaspoon salt
- 3/4 c. lightly packed brown sugar
- 1 egg, beaten
- 1/4 c. melted butter
- 1 c. blueberries, fresh or possibly frzn thawed and well liquid removed
Directions
- Combine oats and buttermilk in small bowl; let stand. Combine flour, baking pwdr, soda, salt and brown sugar. Stir well to blend. Add in egg and melted butter to oat mix. Mix well.
- Add in oat mix all at once to dry ingredients. Stir till ingredients are moistened. Gently fold over blueberries. Fill well-greased muffin c. 3/4 full. Bake in 400 degree oven for 15-22 min. Makes 1 dozen.
