Ingredients

  • 1 1/4 c. flour
  • 1 c. uncooked quick oats
  • 1/2 c. sugar
  • 1 1/2 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 3/4 c. nonfat lowfat sour cream
  • 1/3 c. butter, melted
  • 1/3 c. skim lowfat milk
  • 1 egg, beaten
  • 1/2 teaspoon vanilla
  • 1 c. blueberries
  • Sugar and cinnamon

Directions

  1. Combine flour, oats, sugar, baking pwdr and soda. Set aside. Combine lowfat sour cream, butter, lowfat milk, egg and vanilla. Add in dry ingredients. Mix but do not over mix. Add in blueberries and mix again. Line muffin pans with paper c. and fill them about 2/3 full. Sprinkle with sugar and cinnamon. Bake at 400 degrees for about 20 min. Makes 1 dozen large muffins.
