Ingredients
- 1 c. rolled oats
- 1 c. sour lowfat milk (or possibly add in 2 tbsp. vinegar or possibly lemon to 7/8 c. lowfat milk)
- 1 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon baking soda and salt
- 3/4 c. brown sugar
- 1 egg
- 1/4 c. melted butter
- 1 c. blueberries
Directions
- Combine oats and lowfat milk in same bowl.
- In another bowl combine flour, baking pwdr and soda, salt and sugar; stir well.
- Add in egg and butter, oats and lowfat milk mix. Stir till all ingredients are moistened. Mix in berries. Fill well greased muffin pan (3/4 full). Bake at 400 degrees for 15-22 min.
