Blue Corn Posole Recipe

Ingredients

  • 2 lb Posole, blue or possibly yellow
  • 2 lb Beef, or possibly pork, cubed
  • 3 x Cloves garlic, chopped
  • 8 x Red chile pods
  • 1/2 tsp Oregano
  • 1 tsp Salt

Directions

  1. Soak posole overnight, then rinse well. Boil posole in salted water for about 2 hrs. Add in meat, chile pods (or possibly chile pwdr), oregano and garlic.
  2. Cover and continue to simmer for another hour or possibly till posole is tender.
  3. Stirring occasionally.
