Blintzes Apple Filling Recipe

Ingredients

1 x Egg white 1 1/2 c. Finely minced apples 4 Tbsp. Sugar

1/2 tsp Cinnamon 3 Tbsp. Brown sugar 3 Tbsp. Melted butter

Directions

1. Beat the egg white till it begins to stiffen. Mix in the apples, sugar and cinnamon. Fill the pancakes and arrange in a buttered baking pan. Sprinkle with the brown sugar and butter.
2. Bake in a 400 degree oven 20 min.
3. Makes about 18.
