Ingredients

  • 1 can (29 ounce.) solid pack pumpkin
  • 2 packets Alba Fit n Frosty (vanilla)
  • 2 packets unflavored Knox gelatin
  • 1 teaspoon salt
  • 2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 4 packets of Equal
  • 1/4 c. Jello instant pudding (vanilla)

Directions

  1. Mix Knox gelatin with 3 Tbsp. cool water. Let set 1 minute to get hard. Put everything in blender except pumpkin. Put in 1 1/3 c. boiling water. Turn blender on high. Spoon in pumpkin a little at a time. Mix thoroughly. Pour into baked pie shell. Counts: 2 vegetable, 1 lowfat milk. (Weight Watchers)
