Blackened Salmon with Pineapple Rice Recipe

  • 1 C long-grain white rice
  • 8 oz fresh pineapple, cut into 1/2-inch pieces
  • 1-2 jalapeños, seeded and finely chopped
  • 1/2 C fresh cilantro, chopped
  • 1-1/4 lb skinless salmon fillet, cut into 4 pieces
  • 2 T blackening spice mix or sodium-free Cajun seasoning

Directions

  1. Cook the rice according to package directions. Fluff with a fork and fold in the pineapple, jalapeños and cilantro.
  2. Meanwhile, heat a large skillet over medium heat. Coat both sides of the salmon with the seasoning mix and cook, covered, until opaque throughout and blackened, 3-4 minutes per side.
  3. Serve with rice.
