Blackened Salmon Recipe

Ingredients

  • Strictly a backyard endeavor! Large cast-iron skillet, seasoned Outdoor gas grill Blackened seasoning mix (recipe follows)
  • 1 Tbsp. paprika
  • 1 Tbsp. dry oregano
  • 1 Tbsp. onion pwdr
  • 1 Tbsp. garlic pwdr
  • 1 Tbsp. Zataran's Cajun Seasoning (available at Safeway)
  • 1 Tbsp. coarsely grnd black pepper
  • 1 Tbsp. dry mustard
  • 1/2 tsp dry tarragon
  • 4 x (1 lb) salmon fillets
  • 1/2 c. butter (1 stick), plus 2 Tbsp. (divided)

Directions

  1. To make seasoning mix: Combine paprika, oregano, onion pwdr, garlic pwdr, Cajun seasoning, black pepper, mustard and tarragon.
  2. To make salmon: Remove skin from salmon fillets.
  3. Heat 1/2 c. of the butter. Coat fillets with butter, and then liberally coat with blackened seasoning mix. Let stand in refrigerator 1 hour.
  4. Heat large cast-iron skillet till center of skillet turns white. Place 1 Tbsp. of butter in skillet, cover immediately with 2 fillets. Huge amounts of steam and smoke will rise, so don't do this in the house.
  5. Cook 1 to 3 min per side, depending on thickness. Repeat with remaining 1 Tbsp. of butter and remaining 2 fillets.
  6. Serve in true Cajun tradition with red beans and rice, a nice baguette and a good solid merlot.
