Ingredients
- 2 x 6 ounce halibut, steaks
- 1 tsp thyme
- 1/2 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp salt
- 1/4 tsp onion pwdr
- Â Â bottle garlic pwdr
- 1/4 tsp cumin
- Â Â Sauce
- 1/2 c. fresh-shucked peas
- 1/4 c. apple juice
- 1 tsp extra virgin olive oil
- Â Â salt, to taste
- Â Â pepper, to taste
Directions
- Preparation time is 20 min.
- Preheat oven to 400 degrees Fahrenheit.
- Assemble rub (all ingredients excluding the fish)in a stainless steel bowl. Pat halibut steaks in rub. Heat a cast-iron pan to white warm.
- Place fish in warm pan.
- This smokes a great deal so be prepared and don't inhale the smoke.
- Blacken each side for 3 to 4 min.
- Finish in the oven at 400 degrees for 8 to 10 min.
- Sauce:blanch peas. Cold and reserve.
- Combine peas, apple juice, extra virgin olive oil, salt and pepper in a food processor and puree.
- Check seasoning and adjust if necessary. Bring to a simmer in a saucepan.
