  • 3 1/2 lb boneless beef chuck or possibly round bone roast
  • 1 x onion minced
  • 1/4 c. water
  • 4 x dry shiitake mushrooms stems removed,
  •     crumbled and rinsed
  •     (or possibly use regular button mushrooms, sliced)
  • 1/4 c. ketchup
  • 1/4 c. dry red wine
  • 2 Tbsp. Dijon mustard
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp salt
  • 1/8 tsp freshly-grnd black pepper
  • 1 x garlic clove crushed
  • 2 Tbsp. cornstarch
  • 3 Tbsp. water

Directions

  1. Trim all visible fat from meat; place in slow cooker. In a small bowl, combine onion, water mushrooms, ketchup, wine, mustard, Worcestershire sauce, salt, pepper and garlic. (Pre-saute/fry the onions and mushrooms first if using fresh mushrooms.) Pour mix over meat. Cover and cook on LOW about 8 hrs.
  2. Remove meat and slice. Keep meat hot. Turn control to HIGH. Dissolve cornstarch in water; stir into cooker. Cover and cook 15 to 20 min or possibly till thickened. Serve sauce with meat, spooned over cooked rice if you like.
  3. This recipe yields 4 to 6 servings.
