Ingredients
- 1/2 c. Sugar
- 1Â 1/4 tsp Cornstarch
- 1/2 tsp Salt
- 2 c. Lowfat milk
- 4 whl Egg Yolks
- 1Â 1/2 whl Chocolate, Squares, Melted
- 1 whl Graham Cracker Pie Crust, 9 Inch
- 1 Tbsp. Gelatin
- 1/4 c. Cool Water
- 1 Tbsp. Rum Extract
- 7 whl Egg Whites
- 1/2 c. Sugar
- 1/4 tsp Cream Of Tartar
- 1/2 c. Heavy Cream, Whipped & Sweetened
- 1/2 c. Heavy Cream, For Top, Whipped & Sweetened
- Â Â Chocolate, Shaved For Garnish
Directions
- 1. Mix 1/2 c. sugar, cornstarch and salt; add in lowfat milk.
- 2. Cook over low heat stirring constantly till scalded.
- 3. Stir some of the warm mix into slightly beaten egg yolks; blend into warm mix.
- 4. Cook, stirring constantly till mix comes to a boil.
- 5. Remove from heat.
- 6. Take out 1 c. of warm mix; add in melted chocolate, stirring till well blended.
- 7. Pour into crust.
- 8. Soften gelatin in cool water; stir into remaining mix in pan. Cold.
- 9. When partially set, beat till smooth. Blend in rum flavoring.
- 10. Beat egg whites and cream of tartar till soft peaks form.
- 11. Gradually add in 1/2 c. sugar, beating till stiff and glossy peaks form.
- 12. Fold into cream mix. Mix in 1/2 c. whipped cream. Pile into pie shell on top of chocolate mix.
- 13. Top with sweetened whipped cream; garnish with shaved chocolate.
