Directions

  1. 1. Mix 1/2 c. sugar, cornstarch and salt; add in lowfat milk.
  2. 2. Cook over low heat stirring constantly till scalded.
  3. 3. Stir some of the warm mix into slightly beaten egg yolks; blend into warm mix.
  4. 4. Cook, stirring constantly till mix comes to a boil.
  5. 5. Remove from heat.
  6. 6. Take out 1 c. of warm mix; add in melted chocolate, stirring till well blended.
  7. 7. Pour into crust.
  8. 8. Soften gelatin in cool water; stir into remaining mix in pan. Cold.
  9. 9. When partially set, beat till smooth. Blend in rum flavoring.
  10. 10. Beat egg whites and cream of tartar till soft peaks form.
  11. 11. Gradually add in 1/2 c. sugar, beating till stiff and glossy peaks form.
  12. 12. Fold into cream mix. Mix in 1/2 c. whipped cream. Pile into pie shell on top of chocolate mix.
  13. 13. Top with sweetened whipped cream; garnish with shaved chocolate.
