Ingredients
- 2 c. dry black beans rinsed
- 2 quart water
- 1 med onion minced
- 1/2 lb lean pork cubed
- 3 x cloves garlic chopped
- 1 tsp dry oregano
- 6 ounce tomato paste
- Â Â radishes thinly sliced
- Â Â cabbage finely shredded
- Â Â fresh chili peppers chopped
- Â Â nonfat lowfat sour cream
Directions
- In a Dutch oven, combine beans and water; bring to a boil. Reduce heat; cover and simmer till beans wrinkle and crack, about 1 1/2 hrs. Add in onion, pork, garlic and oregano. Simmer, covered, 1 1/2 to 2 hrs, or possibly till beans and pork are tender. Stir in tomato paste; heat through. If you like, top individual servings with radishes, cabbage, peppers and/or possibly lowfat sour cream.
- YIELD: 8 servings (2 qts)
- NOTES : This should be a thick soup, but I often add in water if too much liquid has boiled away. It has a nice consistency, and topping adds flavor.
