Black Bean Soup Recipe

Ingredients

  • 2 c. dry black beans rinsed
  • 2 quart water
  • 1 med onion minced
  • 1/2 lb lean pork cubed
  • 3 x cloves garlic chopped
  • 1 tsp dry oregano
  • 6 ounce tomato paste
  •     radishes thinly sliced
  •     cabbage finely shredded
  •     fresh chili peppers chopped
  •     nonfat lowfat sour cream

Directions

  1. In a Dutch oven, combine beans and water; bring to a boil. Reduce heat; cover and simmer till beans wrinkle and crack, about 1 1/2 hrs. Add in onion, pork, garlic and oregano. Simmer, covered, 1 1/2 to 2 hrs, or possibly till beans and pork are tender. Stir in tomato paste; heat through. If you like, top individual servings with radishes, cabbage, peppers and/or possibly lowfat sour cream.
  2. YIELD: 8 servings (2 qts)
  3. NOTES : This should be a thick soup, but I often add in water if too much liquid has boiled away. It has a nice consistency, and topping adds flavor.
