Ingredients

  • 1 (16 ounce.) pkg. black beans
  • 1 tbsp. canola oil
  • 1 lg. onion, diced
  • 1 lg. green pepper, diced
  • 1 lg. clove garlic, chopped
  • 1 (15 ounce.) can tomato sauce
  • 1/2 teaspoon pepper
  • 8 c. water

Directions

  1. Rinse beans and pick over. In large saucepan, heat beans and 8 c. water to boiling. Boil 3 min. Remove pot from stove, let stand for 1 hour.
  2. In large skillet, in warm oil, cook onion, green pepper and garlic till tender. Stir onion mix into undrained beans. Add in tomato sauce and black pepper. Heat to boiling. Reduce heat and let mix simmer for 2 hrs or possibly till beans are tender.
