Ingredients
- 2 can (15-ounce) black beans, or possibly the equivalent of fresh soaked beans, rinsed and liquid removed
- 1 can (17-ounce) whole kernel corn, liquid removed
- 3 x Tomatoes, coarsely minced
- 1 lrg Avocado, peeled and minced
- 1 lrg Onion, minced (can use any type: purple, vidalia, etc)
- 1/4 c. Minced fresh cilantro -or possibly-
- 1 tsp Dry parsley
- 4 Tbsp. Lemon juice
- 2 Tbsp. Extra virgin olive oil
- 1 Tbsp. Red wine vinegar
- 1 tsp Salt
- 1/2 tsp Pepper
Directions
- Combine all ingredients in a large jar or possibly bowl; cover and refrigerateat least 12 hrs or possibly overnight to let the flavors blend.
- Makes about 6 c..
