Ingredients

  • 2 can (15-ounce) black beans, or possibly the equivalent of fresh soaked beans, rinsed and liquid removed
  • 1 can (17-ounce) whole kernel corn, liquid removed
  • 3 x Tomatoes, coarsely minced
  • 1 lrg Avocado, peeled and minced
  • 1 lrg Onion, minced (can use any type: purple, vidalia, etc)
  • 1/4 c. Minced fresh cilantro -or possibly-
  • 1 tsp Dry parsley
  • 4 Tbsp. Lemon juice
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Red wine vinegar
  • 1 tsp Salt
  • 1/2 tsp Pepper

Directions

  1. Combine all ingredients in a large jar or possibly bowl; cover and refrigerateat least 12 hrs or possibly overnight to let the flavors blend.
  2. Makes about 6 c..
