Black Bean Salsa

Ingredients

  • 2 c. Cooked or possibly canned black beans
  •     Rinsed and liquid removed if canned
  • 1/4 c. Diced red onion
  • 1/2 c. Diced green bell pepper
  • 1 c. Diced tomato
  • 1 lrg Clov garlic, chopped
  • 1 tsp Grnd cumin
  • 1/4 c. Minced fresh cilantro
  • 3 Tbsp. Fresh lime juice
  • 1 Tbsp. Minced chile pepper, or possibly to taste
  •     Salt, to taste

Directions

  1. MAKES 4 C. DAIRY-FREE
  2. Serve this salsa as a side dish or possibly topping for grain and/or possibly vegetables. Canned beans are acceptable here.
  3. In serving bowl, combine all ingredients.
  4. Cover and let stand at least 30 min to allow flavors to develop.
  5. If prepared more than a few hrs ahead, refrigerateand return to room temperature before serving.
