Ingredients

  • 2 c. canned black beans rinsed and liquid removed
  • 1/2 c. red bell pepper diced
  • 1/2 c. yellow bell pepper diced (or possibly green)
  • 1/2 c. avocado diced
  • 1/2 c. red onion diced
  • 1/2 c. cucumber peel and dice
  • 1/2 tsp cumin or possibly to taste
  • 2 Tbsp. Italian parsley chopped
  • 1 Tbsp. fresh oregano chopped
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. lime juice Tabasco, salt and pepper to taste

Directions

  1. Combine everything in a bowl, adding tobacco, salt and pepper to taste.
  2. Serve at room temp or possibly chilled
  3. Description: "For a heartier dish, add in some cooked rice."
