Ingredients
2 c. canned black beans rinsed and liquid removed
1/2 c. red bell pepper diced
1/2 c. yellow bell pepper diced (or possibly green)
1/2 c. avocado diced
1/2 c. red onion diced
1/2 c. cucumber peel and dice
1/2 tsp cumin or possibly to taste
2 Tbsp. Italian parsley chopped
1 Tbsp. fresh oregano chopped
2 Tbsp. balsamic vinegar
1 Tbsp. lime juice Tabasco, salt and pepper to taste
Directions
Combine everything in a bowl, adding tobacco, salt and pepper to taste.
Serve at room temp or possibly chilled
