  • 1 lb boneless pork cut into 1/2" cubes
  • 2 x 16 ounce. cans black beans liquid removed
  • 1 x red or possibly yellow bell pepper minced
  • 1 med tomato minced
  • 1 sm red onion thinly sliced
  • 1 x clove garlic crushed
  • 1/2 tsp grnd cumin
  • 2 tsp chili pwdr
  • 1/2 tsp salt
  • 1 x 8 ounce. can tomato sauce
  • 1/2 c. lowfat sour cream or possibly plain yogurt
  • 2 Tbsp. minced cilantro

Directions

  1. In a slow cooker, stir together pork, beans, bell pepper, tomato, onion, garlic, cumin, chili pwdr, salt, and tomato sauce. Cover and cook on Low 8 to 9 hrs. Spoon into individual bowls; top with lowfat sour cream and cilantro.
