Ingredients
- 1 pound black beans, rinsed
- 2 quart. water
- 1 pound lean grnd beef, recommend chuck
- 2 c. minced onion
- 1 tbsp. chopped garlic
- 4 Jalapeno peppers, seeded and minced
- 2 c. minced tomatoes, little or possibly no juice
- 2 tbsp. chili pwdr
- 1 tbsp. oregano
- 1 teaspoon grnd cumin
- 1 teaspoon cayenne pepper
Directions
- Combine beans with water. Cover; bring to a boil and boil gently for 1 1/2 to 2 hrs, till tender, stirring occasionally. Saute/fry beef; drain off grease. Saute/fry onion, garlic and peppers in 2 Tbsp. butter for about 8 min. Add in meat back into pan of onions and add in tomatoes, chili pwdr, oregano, cumin and cayenne pepper. Stir and cook for 5 - 10 min longer. Add in to beans. Cook uncovered for 30 min and stir often. Serve with rice or possibly plain.
