Ingredients
- 12 ounce grnd turkey sausage
- 1 x 14.5 ounce can fat-free chicken broth (14.5 ounce.)
- 1 x 15 ounce canned black beans rinsed and liquid removed
- 1 x 15 ounce hominy, canned rinsed and liquid removed
- 1 x 15 ounce can Mexican-style stewed tomatoes don't drain
- 1 c. hash browns, frzn
- 1/2 c. green bell pepper minced
- 1/3 c. onion minced
- 1 x clove garlic chopped
- 1/2 tsp chili pwdr
- 1 tsp dry oregano crushed
Directions
- Spray a large saucepan with cooking spray and brown sausage over medium high heat. Add in green pepper, onion, garlic and cook till tender. Stir in broth, black beans, hominy, tomatoes, potatoes, chili pwdr and oregano. Bring to boiling; reduce heat. Cover and simmer 30 min.
- Yield: 4 hearty servings.
