Ingredients
- 2 c. cooked rice, cooled to room temperature
- 1 c. cooked black beans
- 1 c. minced fresh tomatoes
- Lettuce leaves
- 1 c. shredded sharp cheese
- 1 tbsp. snipped parsley
- 1/4 c. prepared Italian dressing
Directions
- Combine rice, beans, tomatoes, cheese and parsley in large bowl. Pour dressing over rice mix. Toss lightly. Serve on lettuce leaves, if you like. Serves 4.
