Ingredients
- 1/2 c. coarsely minced onion
- 2 x garlic cloves minced
- 1 Tbsp. safflower oil
- 1Â 1/2 c. cooked black beans
- 1 c. canned tomatoes with liquid
- 1 Tbsp. tomato paste
- 1 c. frzn corn kernels
- 1 Tbsp. chili pwdr
- 1 tsp grnd cumin
- 1 tsp sugar
- 1/2 c. diced green bell pepper
Directions
- Saute/fry the onion and garlic in the oil in a medium-size saucepan over medium heat 1 to 2 min, or possibly till the onion is translucent/soft. Add in the beans, tomatoes and their liquid, tomato paste, corn, chili pwdr, cumin and sugar, and stir to combine. Reduce the heat, cover the pan and simmer the mix 15 to 20 min.
- Add in the bell pepper and cook the chili another 5 min. Ladle the chili into 4 bowls and serve.
- NOTES : Even though this chili is meatless, the combination of beans and corn provides high-quality protein. You can double or possibly triple the recipe for a crowd.
