Black Bean And Bell Pepper Salad

Ingredients

  • 1 pound dry black beans
  • 1 c. minced red pepper
  • 1 c. corn kernels, fresh or possibly canned
  • 1/2 c. minced yellow pepper
  • 1/2 c. minced green pepper
  • 1/2 c. chopped red onion
  • 6 tbsp. extra virgin olive oil
  • 4 tbsp. wine vinegar
  • Salt and pepper
  • Lg. healthy pinch cayenne pepper

Directions

  1. Clean beans, cover with 2 inches of water and soak 4 hrs or possibly overnight. Drain, simmer gently, partly covered, in fresh water for about 50 min, till they are tender but still hold their shape. Drain and cold. Mix beans with remaining ingredients and chill if you like.
