  • 2 lb Grnd Angus beef
  • 3 x Grilled Poblano peppers seeded and sliced in thirds
  • 6 slc Yellow cheddar cheese
  • 6 x Hamburger rolls Baby red oak lettuce Pickled red onions
  • 1 x Poblano Pepper Vinaigrette see * Note Salt to taste Freshly grnd black pepper to taste

Directions

  1. Prepare a wood or possibly charcoal fire and let it burn down to embers.
  2. In a large mixing bowl season beef with salt and pepper. Chill till ready to use. When ready to use, form into 1-inch thick disks.
  3. Grill for five min on each side for medium rare. During the last five min top with cheddar cheese. When finished grilling, on one half of the roll place the burger and top with baby red oak, Poblano peppers, Poblano Pepper Vinaigrette and pickled red onions. Serve immediately.
  4. This recipe yields 6 hamburgers.
