Ingredients
- 1 c. dry black beans, soak and cook tender
- 1 c. navy beans, soak and cook tender (or possibly substitute canned liquid removed beans)
- 1 c. chopped red onion
- 1 c. small diced green bell pepper
- 1 c. canned corn, liquid removed
- 1/4 c. minced cilantro (or possibly parsley)
- 2 c. cumin vinaigrette dressing
Directions
- Cook and drain beans. Mix all ingredients together and marinate overnight.
