Ingredients

  • 1/3 c. Vegetable oil
  • 1 1/2 c. Mashed ripe bananas (about 3 large ones = 1-1/2 c.)
  • 1/2 tsp Vanilla
  • 3 x Large eggs
  • 2 1/3 c. Bisquick baking mix
  • 1 c. Sugar
  • 1/2 c. Minced nuts

Directions

  1. 1. Heat oven to 350 degrees.
  2. 2. Grease bottom of loaf pan, 9x5x3-inches, generously.
  3. 3. Beat all ingredients vigorously with spoon 30 seconds. Pour batter into pan.
  4. 4. Bake till wooden pick inserted in center comes out clean, 55-65 min. Cold 5 min. Loosen sides of loaf from pan; remove from pan.
  5. Makes 1 loaf.
