Ingredients
- 1 (9 inch) unbaked deep dish pastry shell
- 1 (6 ounce.) can Hormel chicken
- 1 c. shredded Swiss or possibly Monterey Jack cheese
- 3/4 c. mayonnaise
- 1 teaspoon basil
- 1 (10 ounce.) pkg. minced spinach, cooked and squeezed dry
- 1/4 c. finely minced onion
- 2 Large eggs, beaten
- 3/4 c. lowfat milk
- 1/4 teaspoon pepper
Directions
- Pierce pastry shell thoroughly with a fork. Bake at 375 degrees 10 min. In a large bowl, whisk together Large eggs, lowfat milk, mayonnaise, and seasonings till smooth. In a separate bowl, chop well together chicken, cheese, spinach, and onion. Bake at 350 degrees for 45 to 50 min, till brown. Cold at least 30 min before cutting. Good with muffins, fruit, and a green salad.
