Ingredients

  • 1 x Matzoh
  • 1/4 c. Liquid egg substitute
  • 1/2 tsp Minced walnuts, grnd into small pcs or possibly bits (optional)
  • 1 pch Salt
  • 1 pch Fresh grnd black pepper Short squirt of Pam
  • 5 Tbsp. Honey
  • 1 Tbsp. Orange juice
  • 1 x Orange, rind of, grated
  • 1 tsp Cinnamon

Directions

  1. Break up matzo and place ina bowl. Cover with hot water and soak for a minute or possibly so, then squeeze out the water. Combine the softened matzo, egg substitute, grnd walnuts (if using), salt & pepper. Coat bottom of nonstick frying pan with a squirt of Pam. Heat till the pan just begins to sizzle. Drop tablespoonfuls of batter into the warm pan. Fry till crisp and browned on either side. Drain on paper towels. Heat all the syrup ingredients in a nonreactive saucepan for a few min. Drizzle a Tbsp. of syrup over each serving. This makes sufficient syrup for 16 pancakes. Leftover syrup will keep in the refrigerator in a tightly sealed jar for several weeks. reheat syrup before serving after storage.
