Better Banana Bread Recipe

Ingredients

  • 1 c. mashed very ripe banana (about 3 small)
  • 7 1/4 tsp Equal for Recipes* or possibly 24 packets Equal sweetener or possibly 1 c. Equal Spoonful
  • 1/2 c. plain fat-free yogurt
  • 4 Tbsp. margarine, melted
  • 1 x egg
  • 1 x egg white
  • 1 tsp vanilla
  • 2 c. all-purpose flour
  • 1 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 c. walnut pcs (optional)

Directions

  1. Beat banana, Equal, yogurt, margarine, egg, egg white, and vanilla at medium speed in large bowl till blended; beat at high speed 1 minute. Add in combined flour, baking pwdr, baking soda, and salt, mixing just till ingredients are moistened. Stir in walnuts, if you like. Pour batter into one 8-1/2 x 4-inch greased and floured loaf pan, or possibly three 5-5/8 x 3-1/4-inch loaf pans. Bake at 350F till bread is golden brown and toothpick inserted in center comes out clean, 55 to 65 min for large loaf, 35 to 40 min for the small loaves. Cold 10 min in pans on a wire rack; remove from pan, and cold. Recipe can be doubled to make 2 large or possibly 6 small loaves.
  2. Makes 1 loaf (8-1/2 x 4-inches) 14 slices or possibly 3 loaves (5-5/8 x 3-1/4-inch).
