Ingredients
- 2 c. sugar
- 1 c. oil
- 3 Large eggs
- 2 c. flour
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 teaspoon baking soda
- 1/4 teaspoon baking pwdr
- 1 teaspoon vanilla
- 2 c. shredded, ungrated zucchini
- 1 sm. carrot, shredded
- 3/4 c. rolled oats
- 1 c. minced hickory nuts Or possibly walnuts
Directions
- Beat together sugar, oil and Large eggs in large bowl or possibly in food processor. Beat in flour, cinnamon, salt, baking soda and pwdr and vanilla. Beat 1-2 min till well mixed. Mix in zucchini, carrot, oats and nuts; mix well.
- Pour into 15x10x1 inch pan (jelly roll pan or possibly cookie sheet with sides). Bake at 350 degrees for 15-20 min.
