Ingredients
- 3/4 c. sugar
- 2 tbsp. cornstarch
- 1/4 teaspoon salt
- 2 Large eggs. beaten
- 2 c. lowfat sour cream
- 1 c. raisins
- 2 tbsp. lemon juice
- 1 baked 9 inch pie shell or possibly crumb crust
Directions
- In top of double boiler, blend together sugar, cornstarch and salt. Combine with beaten Large eggs, 1 1/2 c. lowfat sour cream, raisins and lemon juice. Cook and stir over warm water till thick. Pour into baked pie shell. When cold, top with remaining 1/2 c. lowfat sour cream. Refrigerateseveral hrs.
