Ingredients

  • 6 x Bacon, cooked and diced
  • 3 c. Potatoes, peeled and cubed
  • 1 x Chicken broth
  • 1 sm carrot, grated
  • 1/2 c. Onion, minced
  • 1 Tbsp. Parsley, dry
  • 1/2 tsp Celery seed
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 Tbsp. Flour
  • 3 c. Lowfat milk
  • 8 ounce American cheese, cubed

Directions

  1. Cook bacon in large sauce pan till crisp. drain. Add in potatoes, broth, carrot, onion, parsley., celery seed, salt, and pepper. Cover and simmer till potatoes are tender - about 15 min. Combine flour and lowfat milk till smooth and add in to soup. Bring to boil - boil and stir for 2 min. Add in cheese; stir till cheese is melted and soup is heated through.
