Ingredients
- 3 Large eggs, beaten
- 1 1/2 c. sugar
- 1/2 c. butter, melted
- 4 teaspoon fresh lemon juice
- 1 teaspoon vanilla
- 1 1/3 c. coconut
- Healthy pinch salt
- 1 9" unbaked pie shell
Directions
- Preheat oven to 350 degrees. Combine all ingredients (except coconut). Mix well. Then stir in coconut. Pour into pie shell and bake 40-45 min till center is set. Serves 6. As the pie bakes a golden brown topping forms on the surface. This might be the best coconut pie you have ever eaten.
