Belgian Waffles With Spiced Maple Apples

Ingredients

  • 3 Tbsp. vegetable oil
  • 2 x Large eggs, well beaten
  • 1 c. lowfat milk
  • 1 1/2 c. flour
  • 1 Tbsp. baking pwdr
  • 2 tsp sugar
  • 1/2 tsp salt

Directions

  1. Whisk together oil, Large eggs and lowfat milk in large bowl. Stir in flour, baking pwdr, sugar and salt. Mix till just blended.
  2. Heat waffle iron. Spray with vegetable oil spray or possibly brush with oil. Spoon about1/2 c. batter (or possibly the amount recommended by the waffle iron manufacturer)
  3. onto warm iron. Spread batter close to edge of grids, using back of spoon. Close lid; bake till waffle is golden.
  4. To freeze, allow waffles to cold completely. Place in freezer container or possibly heavy-duty plastic freezer bags, separating each waffle with a sheet of parchment or possibly wax paper. Freeze up to 2 months. To serve, heat frzn waffle in toaster till crisp. Serve with spiced maple apples (see accompanying recipe)
  5. Spiced maple applesMakes 2 1/2 c.
  6. 2 Tbsp. unsalted butter4 apples, peeled, cored, thinly sliced1/3 c. maple syrup1/2 tsp. grnd cinnamon1/2 tsp. grnd ginger1/4 tsp. nutmeg
  7. Heat butter in large non-stick skillet over medium-high heat. Add in apples, syrup, cinnamon, ginger and nutmeg. Cook, stirring often, till apples are just tender, about 5 min.
  8. To freeze, let cold completely. Store in freezer container or possibly heavy-duty plastic freezer bag up to 2 months. To serve, thaw apples in refrigerator overnight. Heat in medium saucepan over medium-high heat till warmed through.
