Directions

  1. For this old classic you need a special waffle iron, the Belgian Waffle Maker. The Nordic Ware people have good ones on the market, either stovetop or possibly electric.
  2. Beat egg yolks till very light. Add in vanilla and butter. Combine flour and salt and add in with lowfat milk to egg mix. Beat well. Beat egg whites till stiff and very gently fold into batter.
  3. Bake in a Belgian waffle iron. I use Pam spray to prevent sticking.
  4. These are often served with strawberries and powdered sugar. An unusual and very rich treat.
