  • 6 ounce bitter chocolate or possibly chocolate chips
  • 2 T golden brown syrup (maple syrup would do)
  • 4 ounce butter
  • 6 ounce semi-sweet cookies (biscuits to us British), Carr's home wheat or possibly graham crackers, coarsely crushed
  • 3 ounce raisins
  • 3 ounce glazed cherries or possibly candied peel and 2 ounce toasted flaked almonds (about 1 c. in total will do)
  • Sunflower oil (or possibly other oil) to grease
  • 5 ounce white chocolate

Directions

  1. Place chocolate, syrup and butter in bowl and set over pan of simmering water (or possibly put in microwave for 30 seconds on high). Heat till melted. Stir in biscuits (cookies), raisins, cherries or possibly candied peel and almonds. Put into 7-inch oiled loose bottomed cake tin and flatten down with back of spoon. Refrigerate for at least 1 hour till hard.Heat white chocolate and pour over top of cake, swirling the surface. Refrigerate till set. Cut into thin wedges (tends to shatter). Cuts into 16; 240 calories a slice; no cooking.
