Ingredients

  • 1 pound fish fillets or possibly cooked shrimp
  • 3 to 4 tbsp. biscuit baking mix
  • 1 c. Bisquick mix
  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 c. beer
  • Vegetable oil

Directions

  1. Heat 1 1/2 inches oil in heavy saucepan or possibly deep fry at 350 degrees. Lightly coat fish with 3 to 4 Tbsp. baking mix. Mix 1 c. baking mix, egg, salt and beer till smooth.
  2. Dip fish into batter, letting excess dip into bowl. Fry fish till golden, about 2 min on each side. Drain. 3 to 4 servings. In high altitudes, 3500 to 6500 feet, heat oil to 330 to 335 degrees.
