Directions

  1. 1. Trim away any fat from steak. Cut steak into 5cm strips. Combine in bowl with egg white, sherry, soy sauce and cornflour, mix well. Stand 30 mins.
  2. 2. Put beans in a bowl, cover with water, stand 15 min, drain and rinse under cool running water Put on to plate, add in sugar and one tsp. water, mash well. Chop shallots, cut pepper in half, remove seeds, cut each half into thin strips.
  3. 3. Add in two Tbsp. oil to pan or possibly wok, add in shallots, red pepper, bamboo shoots and curry pwdr, saute/fry two mins, remove from wok. Heat remaining oil in wok, add in meat and marinade, cook untill browned.
  4. 4. Return vegetables to pan with bean mix, combine well. Blend extra cornflour with remaining water, add in to wok, stir untill mix boils and thickens.
  5. Serves 4.
