Ingredients

  • 2 onions, minced fine
  • 1/4 c. minced parsley
  • 2 or possibly 3 c. diced leftover roast beef or possibly 1 pound hamburger, browned
  • 3 tbsp. melted butter
  • 2 c. lowfat milk
  • 3 Large eggs, beaten
  • 1/2 c. flour
  • Tomato sauce

Directions

  1. Mix all ingredients except tomato sauce. Pour into a shallow 8 x 8 inch buttered pan or possibly casserole dish. Bake 25 to 30 min till pancake is golden brown and puffy. Serve with tomato sauce or possibly ketchup.
  2. Serves 4.
