Beef Kebabs With Italian Rice Recipe

Ingredients

  • 500 gm rump steak cubed
  • 3 Tbsp. barbecue sauce
  • 12 x wooden skewers soaked in water
  • 1 tub plain lowfat yoghurt (200 g )
  • 1/4 c. minced fresh parsley italian rice
  • 1/4 c. extra virgin olive oil
  • 1 x onion sliced
  • 1 x clove
  • 2 x flat mushrooms sliced
  • 1 x eggplant cubed
  • 1 can minced tomatoes (400 g )
  • 2 c. long grain rice freshly-grnd black pepper

Directions

  1. Marinate beef cubes in barbecue sauce in the fridge. Heat oil in frying pan with lid. Add in onion, garlic, mushrooms and eggplant. Cook till eggplant is soft. Add in tomatoes, rice and sufficient water to cover. Bring to boil then simmer till rice is cooked, adding more liquid if necessary. Season to taste with pepper. Meanwhile thread meat on to a skewer then grill or possibly barbecue kebabs. Serve kebabs on a bed of vegetable rice topped with lowfat yoghurt and parsley.
